Chocolate Orange Loaf Cake

INGREIDENTS

  • Cake
    200g gluten free plain flour
    65g cocoa powder
    1/2 tsp bicarbonate of soda
    1 tsp baking powder
    130g granulated white sugar
    1/4 tsp fine salt
    120ml sunflower oil
    1 tsp vanilla essence
    240ml Flawsome! Orange Juice
    3 tbsps orange zest
  • Icing
    100g icing sugar
    2 tbsps cocoa powder
    1 tbsp orange zest
    1 tbsp Flawsome! Orange Juice
    1/2 tsp vanilla essence
    60g vegan butter

METHOD

Preheat oven to 180C Grease and line a loaf tin with greaseproof paper.

 In a large bowl sift together the flour, cocoa powder, baking soda and baking powder Add the sugar and salt to the dry ingredients and mix well. Make a well in middle of the mixture and add the oil, vanilla essence, orange juice and orange zest.

 Whisk the batter together until combined and no lumps are remaining . Pour the batter into the loaf tin and place on the middle shelf in the oven for 50 minutes. A skewer inserted into the centre of the cake should come out clean once cooked.

 While the cake is cooling make the icing. Mix together the icing sugar, cocoa powder, orange juice, vanilla essence and vegan butter with an electric whisk to make a smooth glossy icing.

 Once the cake has fully cooled, spread the icing across the top of the cake and sprinkle with orange zest. Store in an air tight container and keep in fridge for up to a week or freeze. Enjoy!
